Monday Bakes // Apple and Vanilla Tea Cake

On Mondays, as it is my day off, I usually will do some baking.
I thought it would be a fun idea to start a bit of a series and write a post on what I chose that week, with the recipe and photos.
It also means I can easily come back to it easily if I want to make it again ^.^

Today, I chose a recipe I haven't tried before - Apple and Vanilla Tea Cake.
Although I do bake cakes often, this one is a bit different to me as it has a layer of custard in the middle.

Custard ingredients


The custard is made first so it has time to cool.

Cake ingredients:

For the cake batter, beat sugar/butter/vanilla until creamy. Then add eggs one at a time. The flours then are sifted over and milk added. Fold everything in!


Once you have the cake mixture and custard done, it's time to start arranging. First I lined my cake tin and thinly sliced an apple.
Add half the cake mixture to the pan, then add the custard - leave a border around the edges.
Now you can add the rest of the cake mixture and smooth over the top. Make sure you leave enough though - it's better to have less on the first layer then the top as I nearly ran out.

Decorate the cake with the apples. I chose a simple design, but I think it looks pretty effective.
Top with melted butter, and raw sugar, and now can go in the oven.

This tastes so good, and the custard worked really well. Next time I'll add more apple as they spread out a lot while cooking.🎂

Evening walk

It was a nice but windy evening. We decided to head down to the beach for a walk.


We live quite near the sea, which I have most of my life. Now we are within walking distance. I find it so calming being at the sea, no matter what the conditions are. Even at night and freezing, wrapped up in a coat, is so calming to be here, and explore the coast. Sometimes we look for sea creatures in the rock pools.






Now we'll watch Dr. Who

The Intro Post

Hi friends,

So I thought I would start a blog. I've recently realised I really enjoy taking pictures, and reliving moments through these. Like a picture of the sky on nice day, or a delicious dessert. I love looking and remembering even the smallest details about that moment. Like being at the beach and watching the dogs play and the surfers, or that cafe in town that I must revisit.
I also love looking at other peoples pictures. And thinking about them in detail too.

As this is an intro post, here's a quick introduction:
I'm living in Wellington, New Zealand and enjoying it. Things I don't like are the wind so maybe I'll move away somewhere calmer.
I love foxes, baking, plants and Pusheen🐱
There are of course plenty more, and will reveal themselves in time, however these I feel like mentioning today.

I hope you will like my pictures and what I have to say.

Castlepoint, February 2017





For my birthday this year, I wanted to do something a bit more special. So we rented a lovely holiday home in Castlepoint and spent a long weekend there.





I have been a few times when I was younger with my family, but it was Nate's first time so it was nice to explore with someone new, and to see how much he enjoyed it too. It is quite a surreal place with unusual rock formations.
The bach we stayed in was great, and when we were packing to leave, we were already planning our next visit here.
As you can tell from the grey sky in the photos, we didn't have the best weather, but it was a relaxing weekend away. Hopefully we can go back soon.⛅
